What you need:
3 cups small whole unpeeled potatoes
1 medium onion (sliced)
2 sprigs of fresh thyme
Olive oil
2-3 Granny Smith apples (cut into chunks)
4 uncooked sweet Italian Sausages (about a pound)
Apple Cider Vinegar
Dijon Mustard
Start by preheating the oven to 425. Toss 3 cups of small whole unpeeled potatoes, chopped onion and fresh thyme with olive oil salt and pepper in a large bowl. Dump into a 9x13 baking dish and lay the sweet Italian sausages on top. Cook for 45 minutes uncovered.
While sausage is cooking chop up apples and toss 2-3 unpeeled granny smith apples with a little more olive oil, salt and pepper. When 45 minutes time has elapsed, flip sausages with tongs and scatter apples over top cooked sausage. Drizzle entire dish with apple cider vineagar and cook 10 more minutes.
Serve with dollops of Dijon mustard.
