FALL FOOD: Easy Sausage and Corn Chowder

I am kind of obsessed with fall cooking right now. This recipe is so easy, so satisfying and is perfect for a cool fall night. I will be making this frequently this fall and I hope you enjoy it too!

Ingredients:
1 pound sausage (I used ground country sausage)
2 potatoes (chopped thinly so they cook faster)
1 onion (chopped)
3 cups milk
2 bay leaves (dried or fresh)
1 can cream corn
Shredded Cheddar Cheese
EVOO and S&P to taste

Steps:
Brown sausage in skillet with a little EVOO. Remove browned sausage and add to a bowl. Cover with foil and set aside. Add chopped onions to skillet and saute in sausage drippings. Add sauteed onions, potatoes, milk and bay leaves to a large pot. Simmer 20 minutes or until potatoes are tender. Stir often. Add sausage to the large pot when potatoes are tender. Then add in the cream corn and heat through another 5-10 minutes. Serve warm and top with cheddar cheese. YUM!
