Since I brought up avocados I thought it only fair to share a recipe with you. So easy. So good.
What you need:
Salt and Pepper
1/4 tsp. cayenne pepper
4 boneless, skinless chicken breasts
2 Tbsp. olive oil
1 medium red onion, finely diced
2 Tbsp. fresh lime juice
1 ripe Hass avocado, pitted and cut into chunks
Steps:
1. In a small bowl, combine 1tsp. salt, 1/4 tsp. pepper and 1/4 tsp. cayenne pepper. Rub all over thawed out chicken breasts
2. In a large skillet, heat olive oil over medium heat. Add chicken and cook until browned on the outside...about 8-10 minutes
3. Meanwhile in a medium bowl, combine onion and lime juice. Set aside until just before serving. Fold avocado chunks into onion mixture and season with salt and pepper. Serve chicken topped with salsa.
I ended up eating the leftover avocado and onion mixture with some tortilla chips and it was amazing! Thank goodness for avocados!

My hand is raised. I love avocado on sandwiches. I got pretty excited when I found out that subway had it again.

I love them! Totally raising my hand. This looks so good. I am actually looking for something to make for dinner tonight.... I just can't remember if the hubs likes them. Maybe I'll just assume he does :)
