-10 small red potatoes (quartered)
-1 yellow onion (chopped)
-4 large carrots (sliced)
-1 head of cabbage (cut in half and roughly chopped)
-4 cups water
-6 oz. beer (Guinness if you want to be festive)
First, quarter your red potatoes and spread them out on the bottom of your crock pot. Then add the chopped up onion and carrots. Cover with 4 cups of water. Add the corned beef brisket on top of the vegetables and pour 6 oz. of beer over it. Add spice packet to the top of the brisket, cover and then set your crock pot on high for 8 hours.
An hour before brisket is finished cooking, coarsely chop half a cabbage and add to the crock pot. Stir to make sure cabbage is mostly covered in the liquids. Let it cook with the brisket for another hour. Serve warm!
Make sure you are wearing green and eating Guinness Beer Bread with your Corned Beef to make it a complete and festive meal!

I've never had corned beef, but it sure looks good! I'm glad you enjoyed it! I should definitely try it sometime.
