Battle of the Enchilada Recipe #1

I recently posted about my newest cooking experiment, Battle of the Enchiladas. Read about it here. The first recipe I tried was from Annie's Eats. I made her Chicken Enchiladas. I started with this one because you make your own sauce and I figured it might be the most time consuming. My friend Betsy was here visiting and I'm so glad I made this with her help because it did have a lot of steps, but it was definitely worth the time and energy! Here are a few pictures of the process...

This recipe took us about 2 hours to complete including prep time and bake time, which in my book is a lot of time for a dinner. So if you're looking for a quick enchilada fix this is not going to be your go to recipe. I don't claim to be a professional chef and I'm sure when I make this again it will take less time, but everyone loved how it turned out despite a little wait time.
On a scale of 1-10 I would rate the flavor of this recipe an 8.5. It was very rich in flavor especially since you nestle the chicken in the sauce to cook. This enchilada recipe also includes cilantro, which I just love. Being that these were the first Enchiladas I've ever tasted I would say I'm a big fan.

That looks great. I agree that a couple of hours is a little long for dinner, but I have to admit that I can't stand being in the kitchen. I'm glad you enjoyed your first enchilada experience!

Looks delicious! These were really your first enchiladas (to taste)? I love enchiladas (and all Mexican food!). Glad you like them!
