The back of the packaging had a recipe for Raspberry pocket pies, but I already had strawberries at home so I substituted them in for the raspberries. Here's what you'll need to make 2 pocket pies, one for you and one for your sweetheart...
Strawberry Pocket Pies for 2
-1 15 oz. package of refrigerated pie crust dough
-1/3 cup sugar, plus more for sprinkling
-2 tsp. cornstarch
-1 cup fresh strawberries
-1 egg, beaten
Start by rolling out your dough into a 9 inch circle. Then use the back of the pie press to cut heart shapes out of the pastry dough. (If you don't have this tool, use a heart shaped cookie cutter.)
Place a piece of heart shaped dough on each half of the crimped side of the press and push down in the center slightly to make a place for the strawberry filling. To make the filling add 1/3 cup sugar and 2 tsp. cornstarch in a small bowl and stir together. Mash strawberries until you have about a cup. Add 2 tablespoons of strawberries to one half of the heart.
Sprinkle 1 tablespoon of the sugar mixture on top. Beat one egg and use a
pastry brush to brush the edges with the egg. This will help seal the
pie together.Fold pie in half (or simply put other heart half on top of the one with the filling) then squeeze down tightly to crimp and seal the edges.
Pre-heat the oven to 400 degrees and repeat procedure with remaining ingredients. Place pocket pies on a parchment-lined baking sheet and brush with egg and add additional sugar. Bake for 15-20 minutes then let cool before devouring.
What a perfect little Valentine's day dessert! I'll be making several more versions of this pie to share with you. There are just so many delicious combinations you can make!
