Pan Fried Pizza + A Cookbook Giveaway!

Recipe from Dinner: A Love Story {see my cookbook review here}

I've made many different kinds of pizzas in my kitchen, but never with a cast iron skillet...until this week! If you are looking for a new spin on pizza you need to try pan fried pizza.

What you need:
::Medium size cast iron skillet
::Olive oil
::4 oz. ham or prosciutto (I bought already chopped up ham)
::1 16 oz. ball pizza dough (I did store bought to save time)
::1 cup Pizza Sauce
::1 8 oz. ball fresh mozzarella, thinly sliced
::1 and 1/2 cups pineapple cubes
::4 or 5 fresh basil leaves (shredded)

What you do:
Start by chopping, shredding and slicing ingredients so you are prepped to go then go ahead and preheat the broiler.

Add a little olive oil to your cast iron skillet and fry up the chopped ham over medium-low heat until it is crispy. Set cooked ham aside.

Prepare your pizza dough then divide dough in half so you can cook up 2 pizzas. Roll each pizza dough half into circles the size of your cast iron skillet. The dough will be thick.

Heat the skillet to medium and add 1 tablespoon of olive oil. Add half of the rolled out dough. Cook for 2-3 minutes until you see the dough start to bubble then flip it over. Add half your sauce, half the mozzarella, half of the ham and half of the pineapple. Cook for another 2 minutes until the bottom is cooked then stick the skillet in the broiler for another 2-3 minutes until the cheese is melted.

Remove skillet from oven and sprinkle fresh basil on top. Take pizza out of skillet and repeat with remaining ingredients. I loved the taste of this pizza and the thickness of the crust. Yum!
And now the exciting part...the author of Dinner: A Love Story, Jenny Rosenstrach, has generously offered to give away a copy of her amazing cookbook to one of YOU. Enter below to win!

How fun... This pan fried pizza concept is quite intriguing. And I love her categorized "what to cook tonight" section - if I didn't already have something else planned, I'd want to try the quick miso-glazed salmon.

Oh and I think I want to make the waffle iron grilled cheese (considering how much I love waffles I can't believe I haven't tried this). :)

Yum! I've been doing a lot of grilled pizza lately now that it is nice, but this sounds like the perfect option for that nice crispy pizza in the winter!
