Here's what you will need:
1/2 pound quinoa
1 cup water
1 mango (chopped)
1/4 pound red bell pepper (chopped into small pieces)
1/2 cup sliced almonds
1/2 cup raisins
1/5 bunch cilantro (chopped)
1/2 red onion (diced)
1/4 cup lime juice
1 T. Balsamic vinegar
1/2 pound shelled Edamame (I bought it frozen and already shelled)
Rinse quinoa under cold water in a fine mesh strainer until water runs clear.
Cook quinoa according to package directions and then let cool. Add cooled quinoa to bowl and add other ingredients. Stir and place in refrigerator to cool. Serve chilled.
This is the perfect warm weather meal. So refreshing and healthy!

I am definitely going to try this...I need a more delicious way to get my daily veggies. For some reason I am still afraid to cook with quinoa, because it is so intimidating...ha! But I'll give this a shot.

that looks delicious! i do love me some edamame! i'm loving all the yumminess that i'm seeing an all the blogs...i am going to have to get in the kitchen with some of these :) and even though i know how to pronounce quinoa, every time i see it, in my head i say "kwee-noah" ;)
Ok...I love that you are going to Whole foods for weekly tastings! How fun. And I LOVE quinoa...I use it quite often...even sometimes as a substitute for oats for breakfast! This salad looks yummy!
